LITTLE ROCK, Ark. (KTHV) -- Today we are sharing a great recipe for peppermint fudge.
Robin Nolder with Holy Souls will join Ashley, Alyse and Tom to demonstrate this fun recipe.
Peppermint Fudge
1-1/2 cups sugar
1-1/2 cups chocolate chips
2/3 cup evaporated milk
1/2 teaspoon vanilla extract
2 tablespoons unsalted butter
1/4 teaspoon peppermint extract
1/4 teaspoon salt
1/4 cup crushed peppermint candy
2 cups mini marshmallows
Mix together the sugar, evaporated milk, butter, and salt in a saucepan over medium heat. Bring the mixture to a boil, and stir constantly for 5 minutes. Remove from the heat and stir in the marshmallows, chocolate chips, vanilla extract, and peppermint extract. Continue stirring until the marshmallows are completely melted. Pour the mixture into a foil lined 8-inch square baking pan and allow it to cool for several minutes. Sprinkle the crushed peppermint on top and press the candy pieces into the fudge lightly so the red and white still shows. Refrigerate for 2 hours. Cut into squares.
