Skinny dip and confetti rolls

LITTLE ROCK, Ark. (KTHV) -- Here are two great recipes that are easy to make for any party or get-together.

Margaret Pauly with FitNuH will join Ashley and Meredith to demonstrate skinny dip and confetti rolls.

SKINNY DIP:

Ingredients:
3/4 cup fat free mayonnaise
3/4 cup fat free sour cream
2 tablespoons dry minced onion
2 teaspoons Cavender's seasoning or other seasoning of choice
2 teaspoons dried dill weed
Mix everything together and let chill in the refrigerator for about 2 hours. Enjoy with raw vegetables.

34 calories per 2 Tablespoon serving

CONFETTI ROLL-UPS

4 Whole Wheat Tortillas
8 Tbsp of fat-free cream cheese
2 Tbsp of capers, rinsed and chopped
¼ cup celery, diced
½ cup carrots, shredded
2 green onions, diced

Let cream cheese come to room temperature or soften in the microwave for a few seconds. Mix cream cheese with the capers, celery, carrots and green onion. Divide between the 4 tortillas. Spread the cream cheese mixture to the edges of each tortilla. Roll up each tortilla tightly and then wrap with plastic wrap. Put in refrigerator for 1 hour. Remove from refrigerator and cut off about 1" from each end. Then cut each roll-up into 8 pieces. Arrange on a platter.

Makes 24 pieces. Each piece is approximately 18 calories.
Recipe can easily be doubled or tripled as needed.
