Pecan encrusted catfish with brown butter amaretto sauce

LITTLE ROCK, Ark. (KTHV) -- Here's a tasty twist to how you eat catfish.

Pecan Encrusted Catfish w/Brown Butter Amaretto Sauce

4 catfish filets
1C pecans
½ C parmesan cheese
¼ C flour
basil
oregano
olive oil
2T butter
honey
¼ C amaretto

- For the breading, in a food processor, combine the pecans, parmesan cheese, flour, basil and oregano.
- Heat a fry pan with oil.
- Dredge each fillet in the breading mixture and place in hot fry pan.
- Pan sear each side of the fillet. Cook until the fish begins flakes apart.

In a separate pan, heat butter till foamy and begins to change color. Whisk in honey. Add amaretto. Serve over fish.
