4-5 oz cleaned salmon filet
3 oz baby spinach cleaned
1/2 small red onion julienne
1 oz crumbled bleu cheese
1 oz spiced walnuts
3 lg strawberries quartered
2 oz port wine vinaigrette
salt and pepper
cook the salmon to desired temperature. In a mixing bowl, toss spinach, onion and strawberries with the vinaigrette. Top off salad with bleu cheese, nuts and salmon
SPICED NUTS
1 lb walnuts
4 oz butter
6 oz brown sugar
1 tsp cayenne powder
1 tsp cumin
1 tsp ground rosemary
1 tsp chili powder
1 tsp ground thym
melt butter and sugar together, add spices and toss with nuts. roast nuts in the oven at 350 till lightly browned
PORT WINE VINAIGRETTE
1 cup port wine reduced to 1/4 cup
2 tbsp red wine vinager
1 shallot diced fine
1 cup olive oil
salt and pepper
whisk all ingredients together
