Today's Home: Tasting summer with a homemade tropical salad

LITTLE ROCK, Ark. (KTHV) - Maybe for a new year's resolution or for Lent, you've vowed to eat healthier, but that shouldn't mean bland.

In this week's edition of Today's Home, Chris Olsen shows us how to make the perfect tropical salad.

This is the perfect salad for a winter day. Why? Because we are using tropical fruits in

it and tropical fruits make you feel like you are on some exotic island, even if we are stuck

here in the cold south.

Here's what you need:

· One Ruby Red Grapefruit

· half of a fresh avocado

· lemon

· dates

· arugula

· Olive oil

· Wine vinegar

Peel the grapefruit and slice into thin chunks. Slice your dates into little slices and get rid of the pit, slice your avocados into thin little slices as well and then remember to slice your lemon.

On a plate, place your arugula in the middle, then add the grapefruit pieces. Next, add your avocados and dates.

Then, add a little bit of olive oil on top of that with some nice sweet wine vinegar. Spritz a little lemon on top, and you have the perfect salad.

Also, you can keep your grapefruit peels and add them to a water pitcher for a little flavor.
