LITTLE ROCK, Ark. (KTHV) -- He may be known for his BBQ, but Anthony Michael with the Cross-Eyed Pig is also great with simple and delicious recipes.

Here is his recipe for Salmon Croquettes with simple sauce.

INGREDIENTS
1 can red salmon drained (save juice) and cleaned of skin and bones
1/4 to 1/2 cup minced onion
1/4 to 1/2 cup minced green pepper
1-2 tablespoons sour cream
1 egg
Bread crumbs or crackers

DIRECTIONS

1. Mash salmon and add the onions and peppers, mix together.
2. Add sour cream and egg and bread crumbs/crushed crackers and mix well.
3. Roll a small handful (1/2 cup) into a ball, roll in fine bread crumbs/crushed crackers then flatten.
4. Fry in a pan with oil and flip once to avoid breakage.

Sauce
Juice from salmon can
1/2 cup ketchup
1/2 cup sour cream
Salt and pepper to taste

DIRECTIONS
In a simmering pan over low heat, pour juice and mix with ketchup and sour cream gently until blended together. Season with salt and pepper. Adjust the ingredients to your liking.
