LITTLE ROCK, Ark. (KTHV) -- Here's how to make salmon croquettes!

Salmon Croquettes

1 can of pink salmon
1 egg (beaten)
¼ cup minced onions
½ cup bell peppers chopped fine
1 table spoon flour
1 table spoon meal

dash of salt and pepper
2 table spoons corn meal
1 table spoon flour

Deep fryer or pan fry

Mix first 6 ingredients together and set aside. Add salt and pepper to cornmeal and flour and place in a shallow bowl. Form croquettes into patties and drop into the meal mixture to coat the outside before placing in to skillet or deep fryer at 350'. Cook for about 3 to 4 minutes until crispy and place on paper towel for excess oil.
