LITTLE ROCK, Ark. (KTHV) – With St. Patrick's Day coming up on Monday, many are scrambling around, trying to find the perfect recipe for their celebrations. Rick Oberdahlhoff with the Marriott Hotel shared one of his favorites with us here at the station -- Irish Cheddar and Stout Fondue

  • Ingredients:

2 Cups Carrots

2 Cups Cauliflower

2 Cups Fresh Red Potatoes

2 Cups Broccoli Florets

2 ½ Tbsp. Flour

¾ Cup Guinness Stout, divided

1 Tbsp. Dijon Mustard

6 Tbsp. Apple Juice Concentrate

1 lb. Irish Cheddar, grated

  • Directions:

Chop vegetables until bite-sized. Arrange vegetables and apples around edge of large platter. Meanwhile, toss cheese with flour in large bowl. Bring ½ cup stout, juice concentrate, and mustard to simmer in large saucepan over medium heat. Gradually add cheese mixture, stirring constantly, until cheese is melted and smooth, thinning with more stout, if desired. Season to taste with salt and pepper.
