LITTLE ROCK, Ark. (KTHV) – Many people think of chicken as boring, but there is always a way to spice it up. Jennifer Owens from the Metabolic Research Center stopped by THV11 Studios Saturday morning to share a few tips on taking your meal from tasteless to tantalizing.
The first way to spice up your grilled chicken is with herbs and salsa. Season your chicken before you grill with olive oil, lemon juice, onion, jalapenos, basil, and rosemary. Then serve salsa one the side. Another way to add more flavor to your chicken is adding serving it with pesto.
Lastly, you can complement your chicken with a cool cucumber salad. No cooking is needed for this one.
4 oz. cucumber, chopped
3 oz. cherry tomatoes, chopped
1 oz. green onion, chopped
1 tsp. canola or olive oil
2 Tbsp. apple cider vinegar
2 pkgs. zero calorie sweetener
Salt and pepper to taste
Tabasco to taste (optional)
Fresh dill to taste
Chop cucumber, tomatoes and green onion; mix together.
Mix the rest of the ingredients together and shake well. Drizzle on vegetables. Chill for about 30 minutes to blend flavors.
