There is a major focus on food during the holidays so it’s tough for some people to make healthy decisions. Dr. Traci Kiernan with TruBalance says if you use the right ingredients, you may not feel so deprived. She suggested trying these recipes!

Kale Salad

1 bundle fresh Kale

1/2 cup shaved Parmesan cheese

1/2 Lemon

Olive oil

Dash of Himalayan sea salt

Wash kale and tear apart in bite size pieces.

Drizzle olive oil over kale, squeeze lemon over and add salt.

Massage the kale to mix olive oil and lemon juice evenly over kale.

Finish with parmesan cheese and serve.

Chocolate Chip Cookies

½ cup of butter, room temp

½ cup of xylitol, powdered

2 free range eggs

1 tsp pure vanilla extract

3 cups of almond flour, sifted

½ tsp of baking soda

¼ tsp of sea salt

1 cup of 73% dark chocolate chips

Bake 15-18 minutes

Fudgy No-Bake Cookies

1/4 cup butter or coconut oil

2 tablespoons cocoa

2 tablespoons almond milk, unsweetened

¼ cup xylitol

¼ cup defatted peanut flour

2 tablespoons water

Dash of sea salt

½ teaspoon vanilla

1 cup rolled oats or 1 cup coconut

In a small saucepan over medium heat, melt butter or coconut oil, cocoa, almond milk, xylitol, defatted peanut flour, water and sea salt.

Bring to a boil and allow to boil, stirring constantly for one minute.

Remove from heat and stir in vanilla or coconut.

Refrigerate to harden.

Makes 16 cookies
