LITTLE ROCK, Ark. (KTHV) -- Anthony Michael with the Cross-Eyed Pig stopped by "THV 11 This Morning" to share a great and easy recipe for black-eyed peas.
INGREDIENTS
2 10 oz cans black-eyed peas
1 lb sausage
1 10 oz can tomatoes (Rotel works)
1 teaspoon rosemary
1 teaspoon oregano
1 small onion
1/2 green pepper
1 small tomatoes diced
2 cloves garlic
DIRECTIONS
1. Brown sausage and drain off grease.
2. Add onion, tomatoes, garlic, pepper.
3. Add undrained black-eyed peas, and undrained tomatoes/Rotel
4. Add rosemary, oregano, and sausage back into skillet.
5. Simmer sausage mixture covered for 20 minutes.
