Soy Hummus Recipe from Three Fold | Dining with Debbie

We're celebrating Arkansas Soybean Month with Debbie Arnold and her trendy hummus recipe! The recipe is from Three Fold Noodles + Dumpling Co.

To celebrate the importance of soybean production in Arkansas, the Arkansas Soybean Promotion Board created the Kitchen|Fields Table Tour, a program helping to inform Arkansas consumers about the food industry’s use of soybean oil and meal, and how consuming soy-based or soy-fed products, such as beef, pork, chicken and turkey, helps supports Arkansas soybean farmers. As a Brand Ambassador for the ASPB, Debbie Arnold shared the Arkansas soy story throughout the year.

In the 2016 growing season, Arkansas producers harvested 3.1 million acres of soybeans, valued at more than $1.4 billion. Soybeans are grown in 41 Arkansas’s 75 counties and rank as the state’s largest row crop, accounting for more acres than rice, corn, sorghum, and wheat combined. Arkansas ranks tenth in the nation in soybean production.

The Kitchen|Fields Table Tour includes several restaurants across the state, including Three Fold Noodles + Dumpling Co in Little Rock where the kickoff event for the tour was held. Lisa Zhang cordially taught me how she makes her Soy Hummus and was gracious in allowing me to share the recipe.

  • Soybean pulp from soymilk
  • 2 Tablespoons minced garlic
  • 2 teaspoons minced ginger
  • 2 Tablespoons minced green onion whites
  • 1/4 cup vegetable oil
  • 2 Tablespoons soy sauce
